I spent one whole afternoon cooking healthy and delicious food. Healthy because the main ingredient is Tuna and delicious because the recipes are from Chef Rosebud.

So how did that afternoon go? The invitation was from 2pm to 5pm. I arrived at the venue The Cookery Place around 1245. I know I was so early because, I took an Uber and I was excited.hehehe! but seriously I wasn’t sure where the venue was and how long Uber would take for me to go the venue. So, I went up around 1pm and meet with Chef Rosebud. I have known Chef Rosebud for quite a time now, thru Instagram. I think I can comfortably call her my Instagram buddy. hehehe. It was our first time to meet each other personally. Usually, we just exchange conversation thru IG of thru text I almost meet her during the launch but did not catch her on time. Our small chitchat was always about our kids, lactation pastries, her healthy (diet) food meals for delivery and my weight lost and wellness journey. It was a good chat actually I learned something much more personal about Chef Rosebud.

Then 2pm came and I again meet someone familiar to me. This time its a co-mom that I follow thru IG. It was Michelle of Momfriday.com. Its my first time to meet with her too. Gosh, she’s so tall! hehehe. Michelle, has been encouraging me to try pilates. She even invited me to join her in a class. I guess I need more guts before I can go wth her. She’s a pro in pilates. hehehe.
then came another mom that I know— A mom that I often work with. Its no other than mommy Ginger or MommyGinger.com blog. Ginger and I have know each other for years. I have been sponsoring her events related to moms and family. It was so nice to see her again. We usually just talk thru FB or email. hehehe. We were also joined by 2 other moms namely Frances of the Topaz Horizon Blog and Shari of The Misty Mom.

2:30 came and Miss Madz of Gold Seas Tuna, gave a short talk about their product. She also emphasized on the kind of tuna their company uses. The tunas they can are all chunks, assuring you that there is no additive and you only get the premium quality, you deserve. 2:35 Chef Rosebud took the floor and invited us to our own stations so we can start our cooking class. First on our lesson was the Gold Seas Tuna Chunks Shepherd Pie. Here’s the recipe.

TUNA SHEPHERD’S PIE
INGREDIENTS
3 medium potatoes, peeled, chopped, boiled and mashed
30g unsalted butter
1/4 cup milk
1 1/2 cup grated cheddar cheese
2 teaspoons olive oil
1 medium white onion, chopped
720g jar tomato pasta sauce
2 celery stalks, trimmed, chopped
150g broccoli, cut into florets
1/3 cup frozen corn kernels
2 tablespoons chopped fresh basil leaves
2 cans tuna in spring water, drained, flaked
PROCEDURE
1. Put mashed potato in a bowl. Add butter, milk and two-thirds of the cheese.
Season with salt and pepper. Stir with a wooden spoon until smooth. Cover to keep
warm.

2. Heat oil in a large saucepan over medium heat. Add onion. Cook, stirring, for 2 to 3
minutes or until onion has softened. Add pasta sauce, celery, broccoli and corn. Stir
and combine. Cook for 6 to 8 minutes or until vegetables are tender. Add basil and
tuna. Season with salt and pepper.
Stir to combine.


3. Preheat grill on medium. Divide tuna mixture between four 1 1/2 cup-capacity
ramekins. Top with mashed potato.
Sprinkle with remaining cheese. Grill for 4 to 5 minutes or until potato is golden and
cheese has melted. Serve.


For the second dish, Chef Rosebud shared her healthy and hearty recipe of Tuna Quesidilla. Mi favorito, but doesn’t know how to do this because I get intimidated with the quesadilla. Don’t get me wrong but my kitchen orientation is baking, I am so used to using kitchen gadgets. hehehe! Never knew it would just this easy. haha!
TUNA QUESADILLA
INGREDIENTS:
1 pack Spaghetti Sauce
1 pack Flour Tortilla, small size
500 grams Mozzarella Cheese
250 grams button mushrooms, sliced
2 cans of Tuna in water
Olive Oil for pan frying
FOR THE SALSA:
Tomatoes, diced
Ripe mango, diced
Olive oil
Lemon
Cilantro
Salt and pepper to taste

To assemble salsa, just mix all ingredients. Its best to cut the ingredients the same size. You also, have to drizzle a little olive oil to make the colors more vibrant.

PROCEDURE
1. Spread some Spaghetti sauce on a tortilla. In a sautée pan, put a little cooking oil and add in the drained tuna chunks. Pls drain your Tuna chunks properly to avoid spatters. Please be careful!



2. Top with grated mozzarella cheese, sliced mushrooms and tuna flakes.

3. Fold in half and pan-fry until golden.


4. Drain on tissue paper to remove excess oil. Serve with tomato salsa on the side.
